This Tropical Cocktail Is a Cross Between a Spicy Margarita and a Singapore Sling



The Pink Elephant is a bright, tropical cocktail that combines blanco tequila with spicy, chili-infused Aperol, passion fruit, pineapple, and fresh lemon juices, Cherry Heering liqueur, and orgeat syrup.

“The Pink Elephant was inspired by Satan’s Circus, a signature cocktail from the opening menu of NoMad New York,” says Robitschek. “We wanted to reimagine it with tequila, leaning into a tropical, Tiki-esque vibe while maintaining the boldness and spice of a Margarita.” 

Robitschek says that this drink was also inspired by classics like the tropical, fruit-forward Singapore Sling, as well as modern classics like bartender Giuseppe Gonzalez’s Margarita riff, the Infante, which uses orgeat and aromatic rose water. 

“The Pink Elephant is for those who love tequila but want something more layered and playful,” says Robitschek. “[This cocktail] appeals to Margarita fans looking for a twist, tiki enthusiasts, and anyone who enjoys bold, vibrant cocktails with a bit of spice.” 

Why does the Pink Elephant Work?

The Margarita maintains its ranking year after year as one of the world’s most popular cocktails. It also remains one of the most commonly riffed on classic cocktail recipes. Because of its simple, 3–4 ingredient build, the easy-to-remember template makes it so ingredients can easily be swapped to create another instant fan favorite.  

This rich variation is “approachable yet complex,” says Robitschek. “We layered nutty almond, cherry, and passionfruit flavors with a hint of chili spice for depth.” 

Key to this vibrant cocktail is the bird’s eye chili-infused Aperol, which creates a subtle chili heat in the drink. The bittersweet Italian liqueur goes through a rapid infusion with the native to Mexico chili peppers, also known as Thai chilis.

“[The Pink Elephant is] refreshing, bold, and layered, striking a balance between sweet, spicy, and tart,” says Robitschek.

The crushed pink peppercorn rim adds a pop of color and texture to the glass and lends a savory note that highlights the varied flavors in the drink.
