This Roasted Leek and Goat Cheese Tart Is a Crowd-Pleasing Vegetarian Dish



Puff pastry saves the day! Thanks to that handy store-bought shortcut, this roasted leek and goat cheese tart recipe is unbelievably easy to make, even if making a “tart” sounds intimidating. All you have to do is slice some leeks and roast them with fragrant thyme. Then you’ll perk up goat cheese with Dijon mustard, roll out the puff pastry, and poke holes all over with a fork to prevent it from rising in the wrong places as it bakes. The goat cheese base goes on, followed by the leeks, and in a snap the tart is in the oven yielding a buttery pastry with tangy goat cheese and sweet, roasted leeks. Serve as a starter for a dinner party, or cut into smaller squares for an impeccable hors d’oeuvre.

This tart makes for an excellent dinner, too. Serve with a side salad dressed with a light, bright dressing.
