How to Make Our Beloved Chicken Spaghetti Casserole

One of the many things to love about our Chicken Spaghetti Casserole is that it’s ridiculously easy to make. The main ingredients are the titular spaghetti, Asiago cheese, butter, whole milk, and rotisserie chicken—all of which can be easily purchased from any grocery store if you don’t already have them at home. You’ll also need all-purpose flour, salt, fresh lemon juice, and an assortment of fresh herbs, but if you have the main ingredients, you can also just adapt the recipe to include whatever you have on hand.

To start, you’ll preheat your boiler, grease a baking dish, and cook the spaghetti according to the package instructions, making sure to reserve ½ cup of the pasta water. Then, you’ll create a roux by combining butter and flour, whisking constantly for about two minutes. Once you have a roux, go ahead and increase the heat to medium so you can slowly whisk in the milk. Let this rich sauce cook for 5 to 6 minutes until it thickens, stirring occasionally.

Don’t forget to save some pasta water once the spaghetti is done cooking! The starchy water will be used to enrich the cheese sauce, which is arguably the most delectable part of this casserole.

Now it’s time to add the cheese and salt, whisking the sauce constantly until it’s smooth. This should take about two minutes. Once the cheese has fully melted, remove the mixture from the heat and stir in chicken, basil, parsley, chives, lemon juice, and the cooked pasta. Then, stir in the reserved pasta water as needed, until your cheese sauce reaches a creamy consistency.

Lastly, spoon the mixture into your prepared baking dish, broil it in the oven for about four minutes, and garnish with the remaining basil, parsley, and chives. Dig in immediately for the best results!

What Reviewers Are Saying

One reviewer kept it short and sweet, simply writing: “LOVE IT!”
