A Big and Delicious Guide to Canada’s Foodways and Flavors

Welcome to Canada’s Table!

The opportunity to guest edit Food & Wine’s first-ever Canada-themed digital issue is the culmination not just of my 20-year relationship with the magazine, but also of a more personal journey. I moved to New York from Canada in search of new horizons 25 years ago, only to find my path led — circuitously — right back home. My last visit, however, felt more like a pilgrimage than a homecoming. After 19 years, Top Chef touched down in the Great White North for season 22. It gave me the opportunity to rediscover my homeland alongside talented young chefs, guided by guests and judges who are shaping Canada’s food culture. This issue has allowed me to dive even deeper into the flavors of Canada, curated to celebrate the country in all its wild, welcoming glory and reported by a dream team of local experts. Our goal: to fuel your cravings for fresh air and fresher seafood, fill your pockets with maple candies, and infuse your dreams with a little northern wanderlust. Away we go!
